Ingredients

Adjust Servings:
1 Tbsp Oil
1 small, or 1/2 large Onion
approx. 7 oz (200gm) Ground Beef
1.5 cups Marinara Sauce See my basic marinara sauce recipe
1 pkg (24 wrappers) Wonton wrappers
1 cup Parmesan Cheese
3/4 cup Ricotta Cheese Low-fat works great
1 1/2 cups, fresh preferred Mozzarella Cheese Shredded will do
Salt
Black Pepper

Easy Mini Lasagnas Wonton Style

I'd like to say these would make for an ideal finger food, but I'd recommend a fork and a plate for all that filled goodness!

Prepare the Beef

Preheat over to 375°F/190°C.
Finely dice the onion. Heat oil in a pan. Cook the onion until golden brown, about 3 minutes. Add the beef, season generously with salt and pepper, stir and cook about 5 minutes. I personally only use very lean beef, so I do not need to strain it, but if you are using a higher percentage, such as 80 or 85%, then you should definitely drain the liquid.

Prepare the Mixtures

In a bowl, mix the beef mixture the marinara sauce and 1/2 cup of Parmesan cheese. (Tip: For extra creaminess, I actually sometimes add some cream cheese into the beef mixture). Mix well. Mix the remaining cheeses together in a separate bowl.

Make your Layers

Coat the cupcake pan with cooking spray. Start layering - one wonton wrapper, cheese mixture, then beef, wonton wrapper, cheese, beef - you get the idea - until they are filled - the last layer should be cheese.

Bake

Bake 15-20 minutes depending on how touchy your oven is. Serve warm. Tip: the corners of the wonton wrappers always seem to get brown, a little too brown - you can tuck the corners down the sides to keep this from happening, or simply snip them off with scissors!
