Jamaican Jerk Pineapple BBQ Sauce

Tangy, sweet and spicy - pairs well with chicken! For less heat, use jalapenos instead of habanero.

Steps

1
Done

Special Equipment

An immersion handheld blender, food processor or blender suitable for hot food

2
Done

Sauté

Chop the onions, crush and chop the garlic. Chop the peppers (remove the seeds first if you want less heat. I'd also recommend wearing gloves with habaneros. The last thing you want is habanero juice in your eye or on your lip later on from your fingers!) Heat 2 Tbsp of oil in a pan (if using an immersion blender, use a 4-qt pan). Sauté everything for 5 minutes.

3
Done

Simmer

Add everything but the lime and let simmer for about 15 minutes until it thickens. Remove from heat.

4
Done

Purée

If using an immersion blender, there is no waiting time, but for food processors and blenders - wait until it cools down first (follow your manual).

5
Done

Add the Finishing Touch

Add the fresh lime juice, and if you have a fine grater, you can add some of the lime zest. Stir well and enjoy. This BBQ sauces keeps refrigerated in a sealed container for about 2 weeks.
