1/2 cup Apple Cider Vinegar

1 Tbsp Granulated Sugar

1 Garlic Cloveor 1/2 tsp garlic powder

1 Jalapeño Pepper

1 cup (1 large bunch) Fresh Cilantro

Make the Vinegar BaseCombine the water, vinegar, sugar and all the spices and bring to a boil for 1 minute. Remove from heat and set aside. |

Peel and mince the garlic and add to the vinegar base. Chop the pepper and add (with or without seeds depending on how spicy you want it). Chop the cilantro and add. Juice the lime and add the juice. Stir to combine. |

Slice the tomatoes. In your serving dish, layer the tomatoes, one layer at a time, then add the vinaigrette,another layer, etc. Cover and refrigerate for 1 hour or until serving. |
