Ingredients

Adjust Servings:
1 1/2 cups (dry) Long Grain White Rice
1/4 cup Vegetable Oil
1 Onion
2 cloves Garlic
4 Tomatoes
1-2 Serrano Pepper
1 Tbsp (or ancho or adobo) Chili Powder
1 Tbsp Cumin
3 cups Water

In a mixer, blend the tomatoes, onion, and garlic. Set aside. Dice the serrano pepper (remove seeds) and set aside.

Fry the Rice

Rince the rice in a mesh strainer until water runs clear. Heat oil, add rice and cook stirring constantly until rice turns golden - approx 10 min. Reduce heat.

Add the remaining ingredients and season with salt and pepper. Bring to a boil then cover, reduce the heat to low and let the rice simmer for approx. 20 min. Allow to rest for 5 min. then fluff the rice up with a fork and serve.
