Ingredients

Adjust Servings:
2 cups Rice
2 Tbsp Olive Oil
3 Chicken Breasts
4 Garlic Cloves
1 Tbsp Hoisin Sauce
2 Tbsp Soy Sauce
1 (or bird's eye or 1 tsp of red pepper chili flakes) Red Thai Chili Pepper
2 tsp Brown Sugar
1/4 tsp minced Fresh Ginger
1/2 cup Chicken Broth
1 Fresh Broccoli
small bunch Spring Onions
(garnish) White Sesame Seeds

Sweet and Spicy Chicken Broccoli Stir-Fry

This sweet and spicy chicken and broccoli stir-fry is a great meal to make on a weeknight when you don't have a lot of time.

Make the Rice

Make the rice acc. to the type of rice and the way you are making it, e.g., Instapot, stovetop ...

Saute the Chicken

Pat the chicken breasts dry. Season the chicken breasts with salt and pepper. Saute in olive oil in a wok or deep pan. Remove.

Mince the garlic, chop the Thai chili (remove seeds for less heat), or use red pepper flakes, and add to the pan/wok. (Onion slices could be added as well.) While the garlic is cooking, quickly mix all the sauce ingredients together then add to the wok/pan.

Add the cut-up broccoli and chopped green onion.

Return the chicken to the pan, either whole or in pieces. Let simmer for several minutes then serve with more fresh green onion if desired and sesame seeds on a bed of rice, or, if the rice was pre-made, mix the rice in to warm it up.
