Ingredients

Maultaschen Dough
150g All-Purpose Flour
150g Durum Semolina Flour
Salt
3 (medium) eggs
To roll out the dough All-Purpose Flour
Filling
250g Ground Beef Can be a mix with pork
2 slices Old Bread I use a hard baguette
100ml Milk
2 Onions
100g Bacon
200g Fresh Spinach
1 Egg
Salt
Black Pepper
Nutmeg
Egg Yolk
Beef Broth
700ml / 2 cups Beef Broth
1 bunch Fresh Parsely
1 bunch (optional) Chervil

Authentic German Maultaschen (Meat & Spinach Filled Ravioli)

My son and I loved eating maultaschen which is a traditional schwäbisch dish in (Swabian cuisine). It is essential to make your own dough, which is well worth it! The beef and spinach maultaschen are usually served with a beef both, but can also be sauteed in butter.

Make the Maultaschen Dough

Mix all the dough ingredients for 10 minutes by hand or with a mixer/processor with an appopriate dough attachment. Wrap in plastic foil and let rest for 2 hours in the refrigerator.

Prepare the Maultaschen Filling

Remove the crust from the bread. I use a baguette, but you can use any white bread you have. Cut the bread into squares. Heat the milk for 30 seconds so it is luke warm. Soak the bread in the milk.

Meanwhile. Peel and dice the onions, mince the garlic, dice the bacon and spinach. Saute everything but the spinach in a bit of butter or oil or ghee in a pot for about 8-10 min. Add the spinach and cook for another 3 minutes. Remove from stove.

Either in the same pot or in a new bowl, add the ground meat, the soacked bread, and eggs and mix with your hand - you don't want to over mix. Season with salt, pepper, and nutmeg. I use fresh nutmeg grated.

Make the Beef Broth

Chop the herbs and heat the broth in a large pot.

Fill the Maultaschen

Roll out the dough on a lightly floured surface to make a long rectangle. You can do half ata time. On the side closest to you, add a spoonful of filling, leaving a gap between each one. Beat 1 egg yolkd and brush the egg yolk onto the dough around all the filling and cover the entire surface. Take the edge closest to you and as if you are folding thr dough, roll it up so the filling moves with the dough until you reach the other sice. Press down the side with your finger. Press inbetween each filling to form a ravioli shape. Use a pasta cutter or a knife to cut them appart.

Cook the Maultaschen

Add the Maultaschen to the beef broth (should be hot and at medium/medium high) and let cook for 10-12 minutes. Then serve.
