Season/Marinate the ChickenCombine the salt, black pepper, minced garlic, minced onion, oregano, and red pepper flakes. Pat the chicken dry and coat the chicken. You can let the chicken marinate in the seasoning overnight in the refrigerator if desiered. |

Cook the peasSteam or cook the peas in water with a bit of salt. |

Sauté the ChickenHeat the olive oil in a deep pan and sauté on medium-high heat, about 5 minutes on each side. (Inside temperature should be 165°F / 73.8°C). Don't move or flip the chicken around, otherwise the crust will not be crispy. Remove and set aside to rest. |

While the chicken is cooking, peel and mince the garlic. And set aside. Chop the herbs and set aside (if using). Juice 1 lemon and set aside (optional). Zest a bit of the lemon peel if you would like a fresh citrus note to top off your dish at the very end. |

Immediately after removing the chicken from the pan, add the garlic. Let cook simmer for 3-5 minutes. |

Make a RouxAdd the butter to a sauce pan or the same pan as with the garlic and let melt. Gradually add the flour and whisk until thick and there are no more lumps. |

Gradually add the cream and stir constantly. Add the salt, pepper, milk and stir constantly - the garlic should also be comined. Slowly add the Parmesan or Romano cheese while continuing to whisk. Add the sage, parsley and lemon juice and whisk. Let simmer on low for 3 minutes. |

Add your freshly made pasta to the sauce on the stove on low heat and stir. Let simmer for 3-5 minutes. |
