8-12 (or 4 breasts) Chicken Tenders
Salt
Black Pepper
2 Tbsp Dried Minced Garlic
1.5 Tbsp Dried Minced Onion
1.5 Tbsp Dried Oregano
1 Tbsp Crushed Red Hot Pepper Flakes
2 Tbsp Olive Oil
1 pound (or pre-made) Fresh Fettuccine Noodles See recipe link
4 Tbsp (1/2 stick) Unsalted Butter
1/4 cup All-Purpose Flour
1 cup Heavy Cream
1 1/2 cups Whole Milk
1 tsp Salt
1 tsp Black Pepper
3/4 cup (or Romano) Parmesan Cheese Grated
Small handfull (optional) Fresh Sage Leaves
Small handfull (optional) Fresh Parsley
1 (optional) Lemon
1 cup Peas

Make the Homemade Fettuccine Noodles

If you are making your own Fettuccine noodles from scratch, here is a great and easy recipe: How to Make Basic Homemade Pasta with Durum Flour. If using freshly made store-bought pasta, you will add the noodles in right at the end. If you are using boxed pasta, follow the box's directions ;)

Season/Marinate the Chicken

Combine the salt, black pepper, minced garlic, minced onion, oregano, and red pepper flakes. Pat the chicken dry and coat the chicken. You can let the chicken marinate in the seasoning overnight in the refrigerator if desiered.

Cook the peas

Steam or cook the peas in water with a bit of salt.

Sauté the Chicken

Heat the olive oil in a deep pan and sauté on medium-high heat, about 5 minutes on each side. (Inside temperature should be 165°F / 73.8°C). Don't move or flip the chicken around, otherwise the crust will not be crispy. Remove and set aside to rest.

While the chicken is cooking, peel and mince the garlic. And set aside. Chop the herbs and set aside (if using). Juice 1 lemon and set aside (optional). Zest a bit of the lemon peel if you would like a fresh citrus note to top off your dish at the very end.

Immediately after removing the chicken from the pan, add the garlic. Let cook simmer for 3-5 minutes.

Make a Roux

Add the butter to a sauce pan or the same pan as with the garlic and let melt. Gradually add the flour and whisk until thick and there are no more lumps.

Gradually add the cream and stir constantly. Add the salt, pepper, milk and stir constantly - the garlic should also be comined. Slowly add the Parmesan or Romano cheese while continuing to whisk. Add the sage, parsley and lemon juice and whisk. Let simmer on low for 3 minutes.

Add your freshly made pasta to the sauce on the stove on low heat and stir. Let simmer for 3-5 minutes.

Add a pinch of lemon zest if desired and serve.

Serving Suggestions

This Homemade Chicken Fettuccine Alfredo goes well with steamed broccoli, peas, or creamed zucchini (cook 2 diced zucchini and 1 onion in 1 cup chicken broth, add salt, pepper, and simmer for 20-25 minutes, then add a bit of whole milk or cream and serve - I mix it in with the pasta as well).

Alternative - you can also add chicken stock to thin the sauce or to replace the butter to make it lower fat, and replace the heavy cream with half-and-half or 2%.
