Peel the cucumbers. Using a mandolin (or a knife), thinly slice the cucumbers into a colander/strainer. Let strain for about 10 min. so that the extra water is extracted. |

In a bowl, combine the cucumber slices with the cream (note - sour cream does not work well. I recommend using normal cream/heavy cream). Season with salt and pepper to your liking. |

Let marinate in the cream in the refrigerator for 15 minutes (or more) before serving so it is nice and cool. |
