Make the Simple Syrup for theSorbettoCombine 2 cups of water and 2 cups of sugar in a pot over medium-high heat. Whisk constantly until the sugar dissolves. Reduce the heat to medium and let simmer for 5 minutes. Remove and let cool one good hour. |

Once the syrup has cooled, cut the watermelon, remove the seeds if necessary, and dice into cubes. Put in a blender. Squeeze the juice of one lemon and add to watermelon. Add the sugar syrup and blend. If desired, chop fresh mint and add. Transfer to the ice-cream machine bowl and churn following the manufacturer's directions. |
