1 bunch White Asparagus Green asparagus also works
a pinch Sugar
1/4 cup Pine Nuts
optional garnish Fresh Parmesan Cheese
garnish Balsamic Vinegar Glaze
optional garnish Fresh Basil

Roasted White Asparagus with Pine Nuts and Sun-Dried Tomatoes

I was lucky enough to live in Baden-Württemberg, Germany (Black Forest/French boarder) where white asparagus grows abundently between April and June. On Sundays, we would go to the only "all you can eat" special I've ever seen in Europe - where we could eat as much white asparagus, German herb pancakes, ham, and sauce hollandaise as we pleased. (FYI Americans- they don't do buffets - you just keep ordering another plate - hot and fresh). What a delight! This is my favorite twist on roasted white asparagus. (In the US, white asparagus is imported from Peru.)

What is the difference between white asparagus and green asparagus?

White asparagus is actually my favorite vegetable. White asparagus is thicker than green Asparagus and gets its white coloring due to the fact that it grows entirely underground with no sun. White asparagus is sweeter and less bitter than green asparagus.

Preheat the oven to 430°F/221°C. Line a baking sheet with parchment paper.

Toast the Pine Nuts

Toast the pine nuts for approx. 1 minute in a pan on medium-high heat - with no oil or butter - just dry. Remove immediately. Roasting the pine nuts allows the delicious nutty flavor to come out more.

Roast the Asparagus

Cut the ends of the asparagus off. ormally there is no need to peel the skin off green asparagus but white asparagus has a thicker wooden-like skin which needs peeling, so peel the end stalks to remove the woody textured skin. Lay flat on the baking sheet. Sprinkle sugar sparingly over the white apseragus - this removes the bitterness. Dice the sun-dried tomatoes and add. Drizzle olive oil (or some of the oild from the sun-dried tomatoes jar) over the asparagus and season with salt and pepper. Sprinkle with the toasted pine nuts. Bake for 12-15 minutes.

Garnish Suggestions

Serve the asparagus immediately with drizzled balsamic vinegar. Great additional garnish pairings are spring or green onions, freshly grated Parmesan cheese, and fresh chopped basil.
