Spicy Ground Pork and Zucchini Stir-Fry

Ingredients

Adjust Servings:
1 lb (450g) Ground Pork
3 Zucchini
1 Onion
1 Garlic Clove
2 Tbsp Olive Oil
3 Tbsp Soy Sauce
1 small piece Fresh Ginger
2-3 Tbsp Sambal Oelek substitute - red pepper flakes
3/4 cup Chicken Stock
1 tsp Rice Wine Vinegar
1 Tbsp Brown Sugar
1 tsp Sesame Oil
1 Lime
(garnish) Green Onions
(garnish) Black Sesame Seeds

Spicy Ground Pork and Zucchini Stir-Fry

I recently bought a huge slab of pork loin and was looking for something new to do with it, so I ground it! Ground pork is so versatile and tastes amazing in this spicy and healthy stir-fry. Sambal oelek is the star ingredient to give this stir-fry its firey goodness.

Steps

In a wok or large pan, add 1 Tbsp oil and saute pork (season with salt and pepper) for 5 minutes. Remove from pan and set aside - it will not be fully cooked!

Slice the onion, mince the garlic. In the same wok or pan, add 1 Tbsp oil, add the onion and garlic and saute. Meanwhile, slice the zucchini, then add to the pan and saute for 5 minutes. (season with salt).

Make the Spicy Sambal Oelek Sauce

Combine the chicken stock with the soy sauce, sesame oil, brown sugar, sambal oelek (add 2 or 3, or more Tbsp to your desired level of hotness) and rice wine vinegar. Grate a bit of fresh ginger and add. Juice 1/2 a lime and add.

Add the sauce and the ground pork back to the wok and mix. Cook for another 5 minutes.

Serve with spring onions and sesame seeds over a bed of rice.
