Prepare the DoughHeat the milk, honey, and butter either on the stove or in the microwave on low until the butter melts. Use a Thermometer and wait until the temperature is reduced to 110-115 degrees F (43-46 C), then add the yeast and stir. (If you put it in while it's too hot, you will kill the yeast.) Let the yeast activate for 10 minutes. |

Separate 1 egg and reserve the yolk for egg wash. Add the egg white and the remaining egg to the yeast mixture - once it has activated after the10 minutes. |

Combine the flour, cornstarch, salt, then slowly add the yeast mixture - I recommend a food processor or mixer with a dough hook. Add more flour if necessary until the dough is smooth and elastic, approx. 5 min. |

Remove from bowl with well-floured hands and knead on a floured surface into a ball. Put into an oiled bowl and cover with a towel to let rise for 1.5 hours. |

Form the Cinnamon RollsPreheat the oven to 350 degrees F (176 C). Roll out the dough on a floured surface into a large rectangle. Sprinkle with cinnamon sugar and cinnamon. Roll into a role/log. Using a very sharp knife or dental floss or a wire cheese cutter, cut into pieces and transfer the rolls to your baking dish (make sure you first spray your dish with oil or coat with butter beforehand). |

Make the Egg WashMix the remaining egg yolk with 1 Tbsp water, then brush each cinnamon bun with the egg wash. |

Bake the Cinnamon BunsBake the cinnamon buns for 25 minutes. If you are using a convection oven, check after 15 minutes! |

Make the Vanilla GlazeMix the confectioner's sugar with water and the vanilla extract. Drizzle the cinnamon buns with the glaze and serve. The cinnamon buns are best when served the same day. To reheat - use the oven or toaster - please don't use the microwave - they will turn into a rock! |
