Directions
Sorbetto is a naturally dairy and egg free dessert. The difference between sorbetto and gelato is that sorbetto is made with sweetened juice, fruit puree, and/or water and is denser than gelato. You can also serve this in small portions to cleanse the palette between meals.

Make the Simple Syrup for theSorbettoCombine 2 cups of water and 2 cups of sugar in a pot over medium-high heat. Whisk constantly until the sugar dissolves. Reduce the heat to medium and let simmer for 5 minutes. Remove and let cool one good hour. |

Once the syrup has cooled, juice the lemons and add the lemon juice to the mixture. Grate 1 Tbsp of a lemon rind and add. Transfer to the ice-cream machine bowl and churn following the manufacturer's directions. |

When finished churning, transfer to an airtight container and freeze 2 hours before serving. |
