Ingredients

1 head(eg boston, bibb, red leaf, romaine) Lettuce
1 English Cucumber
1 Yellow Bell Pepper
1 Red Onion
1 pint (approx. 473 gm) Cherry Tomatoes
1/3 cup Fresh Mint Leaves
1/3 cup Fresh Cilantro Leaves
1/3 cup Fresh Basil Leaves
1/4 cup Peanuts
4 Garlic Cloves
1 piece Fresh Ginger
3, or scallions Spring Onions
2-4 (or serrano or jalapeno) Fresh Thai Chili Pepper
3 Tbsp (or honey) Brown Sugar
1/3 cup Soy Sauce
1 Lime
2 Tbsp Sesame Oil

Spicy, crunchy, a bit of sweetness - great with grilled steak or chicken

Peel the ginger, garlic and onion. Chop the spring onion. Put the ginger, garlic, spring onion whites, chili and sugar in a bowl and mix to a paste - the best would be with a mortar and pestle, otherwise you can use the back of a spoon or a spice grinder. Extract the lime juice and add. Then add the soy sauce, oil, and 2 Tbsp of water and stir until dissolved.

Chop the peanuts and remaining vegetables and herbs. Toss with the dressing and serve. Suggested accompaniment: grilled steak or chicken.
