Prepare the PotatoesWash the potatoes. Boil them in water for 10 minutes. Remove and let cool. Then peel and slice thinly. |

Make the toppingsDice the Pancetta or bacon and add to a pan on medium heat and cook for 3 minutes. Peel and chop the garlic and shallots and add. Chop all the herbs and add. After a good 5 minutes, add the Swiss chard and let simmer on medium-low heat for 5 minutes until wilted. |

Preheat the oven to 400°F / 204°C. Add the thinly sliced potatoes to the pizza dough (you may want to punch holes in the dough first on your baking sheet, pizza sheet or preheated pizza stone if you do not want air pockets). Add a layer of potato slices, then top with bacon Swiss shard toppings. Add the Mozzarella, Gruyere and Parmesan cheese on top. Bake for 12-18 minutes until the crust looks golden-brown and the cheese is completely melted. |
