Preheat the oven to 350°F / 176°C. |

Note- you can use leftover rice, or make the rice according to the package instructions, eg. for 2 cups of rice boil in 3 cups of water with a pinch of salt for approx. 20 min. |

Sauté the ChickenHere again, this is a great dish to use up leftover chicken, or you can cook up a few new breasts for this. Pat the chicken breasts dry. Season with salt. Heat the olive oil in a deep pan and sauté on medium-high heat, about 5 minutes on each side. (Inside temperature should be 165°F / 73.8°C). Don't move or flip the chicken around, otherwise the crust will not be crispy. Remove and set aside to rest. (Tip - you can use a dutch over or oven-proof pan so you can transfer it directly to the oven, otherwise you will need an additional casserole dish). |

While the chicken is cooking, peel and mince the onion and garlic. And set aside. Chop the herbs and set aside. Juice 1 lemon and set aside. Zest a bit of the lemon peel if you would like a fresh citrus note to top off your dish at the very end. |

Immediately after removing the chicken from the pan, add the chicken stock to the same pan on medium heat. Add the garlic and onion and let simmer for 5 minutes. |

Add the Dijon mustard, lemon juice, salt, pepper, parsley and the cooked rice. Dice or cut up the chicken and add, then add the cheese. Let simmer for 3 minutes, |

Transfer to the preheated oven and bake for 20 minutes (no lid). (Note - you can continue cooking it on the stove top with a lid for similar results, but in the over, you will get the baked, crust effect). |

VariationFor an extra crunchy topping, mix 1 cup of Panko bread crumbs with a good 2-3 Tbsp of fresh parsley, 1 Tbsp of melted butter, and 1/2 cup of shredded cheese or Parmesan cheese and add this to the top of your casserole before baking. Another variation - try this with pasta instead of rice. |
