5 Bananas
2 Egg
1/3 cup Milk
1/2 Lemon
1/2 cup Brown Sugar
1/2 cup Sugar
1 Tbsp Vanilla Extract
1 1/2 tsp Baking Soda
1/2 tsp Salt
3 Tbsp Unsalted Butter
2 cups Flour

Moist Low-Fat Buttermilk Banana Bread

Who doesn't like banana bread?! My low-fat banana bread recipe is so moist, you'll never know there is less fat!

Preheat oven to 350°F / 176° C. Lightly coat a 9x5" bread loaf pan with olive oil spray, baker's spray, or butter.

Make the Buttermilk

Squeeze the juice of 1/2 a lemon into the milk and let sit for 10 minutes.

Mash the bananas with a potato masher. Melt the butter. Add the sugar, mashed bananas, eggs, and butter to a mixing bowl and mix with your mixer.

Mix all the dry ingredients then add to batter and mix. Pour into a pregreased 9x5 loaf pan (I prefer cast iron). Brush top with melted butter or egg wash if desired for added shine (1 egg with 1 Tbsp water). Bake for 30-35 min. or until toothpick comes out clean.

Variations

Add 1/2 cup of crushed walnuts and/or chocolate chips.
