6 Tomatoes

1 Zucchini

1 Jalapeño Pepper

1-2 Tbsp to your liking Chili Powder

1 Tbsp Dried Oregano

1 Tbsp Cumin

2 squares Dark Chocolate

(Optional) Hot Sauce

Peel and dice the onion. Peel and mince the garlic. Remove the seeds from the jalapeno and dice. Heat the oil in a large pot over medium heat. Saute the onion, jalapeno, and garlic for 3 minutes. Add the ground beef and season with salt and pepper. Cook and stir occassionally until meat is cooked - 3-5 minutes. |

Meanwhile, peel and dice the zucchini. Cut and remove the seeds of the tomatoes. Add to the pot. Stir in the beans (drained and rinsed). Add the spices and chocolate and reduce to low heat and simmer for 1 hour. |

Serve with spring onions and cheese if desired, plus extra cilantro. |

VariationReplace the ground beef with chicken. You can also add some extra hot sauce, such as chilie lime hotsauce, and add some extra acidity with lime juice, which pairs well with the chicken. |
