2 Tbsp Olive Oil
1 Onion
4 Garlic Cloves
1 can Crushed Tomatoes
1 can Diced Tomatoes
2 tsp Dried Oregano
1 tsp Dried Fennel
2-3 tsp Crushed Red Pepper
1 pkg or homemade Gnocchi
1 can Cannellini (White) Beans
1/3 cup Chicken Stock
1/4 cup Cream
1 Lemon
Handful Fresh Basil

Gnocchi with White Beans and Homemade Tomato Sauce

This tomato sauce variation adds layers of flavor to the gnocchi and white beans.

Make the Tomato Sauce

Saute the diced onion and minced garlic. Add the tomatoes, chicken stock, oregano, fennel, and red pepper and season with salt and pepper, then let simmer for approx. 25 min.

Add the gnocchi and beans and let simmer for 5 minutes. Add the juice of 1/2 a lemon and the cream. Simmer 2 minutes. Serve with fresh chopped basil.

Alternatives

Add spinach or chicken to the dish. You can also try this recipe out with sun-dried tomatoes and/or roasted red peppers. Or top it off with mozzarella cheese and put it under the broiler for 2-3 minutes.
