8 Corn Tortillas or flour tortillas, see recipe link
1/2 cup Fuego Salsa or other salsa
approx. 2 lbs (or 2kg) Flank Steak Or skirt or other cut
approx. 1 cup Mojo Beef Marinade See recipe link
Other Toppings
1/2 head Lettuce
2 Tomatoes
1 Red Onion
1 Bell Pepper any variety
1 bunch Fresh Cilantro
1 cup, optional Cojita Cheese or other cheese
1, optional Fried Sweet Potatoes see note below

Make the Mojo Marinade for the Beef

Follow this 5-minute recipe to make the marinade: Mojo Marinade. Then marinate the beef for at least 1 hour (or overnight).

Make the Tortillas (optional)

Make the Fuego Salsa (optional)

Prepare the Taco Toppings

Slice the peppers, lettuce, onions, tomatoes, etc. - anything you would like as a fresh and crunchy topping.

Grill the Beef

Turn your grill on high. Discard the marinade. Season with salt if desired. For flank and skirt steak, grill for 1-2 minutes on each side to your liking. Let rest for 5 minutes before slicing.

Assemble your tacos with all your toppings, salsa and favorite cheese and serve.

Variation: Shave 1 sweet potato, season with salt and paprika, and fry it to add extra crispiness.
