Roast the Garlic BulbCut off the top of the garlic bulb. Put in foil. Drizzle with olive oil. Bake at 400°F (205°C) for 30-40 minutes. Remove. Let cool for 5 min., then squeeze out the roasted garlic. |

Steam the cauliflower. Drain the cauliflower and return it to the pot if using an immersion blender, or a normal blender, food processor or mixer. Puree it. Add the roasted garlic, Feta cheese, Greek yogurt, the juice of 1/2 lemon, salt and pepper, and puree everything together. |

Top with chopped spring onions, parsely, pine nuts and orange slices. Sprinkle with Sumac and more black pepper. |
