Smear mayonnaise and dijon on the bread. Layer with cheese (and ham if desired). |

Beat 2 eggs with a touch of water or milk. Dip the sandwiches in the egg mixture to coat. |

Heat mayonnaise in a skillet. Cook the grilled cheese sandwiches on both sides. After flipping once, but a heavy pan, eg a cast iron pan, on top of the sandwiches to push them down and make them crispy. |
