Make the GuacamoleBlend the first seven ingredients. Then add diced tomatoes (deseeded) and minced red onion. |

Sauté the ChickenPreheat the oven to 400°F/204°C. Season the chicken with salt and chipotle chili powder and sauté the chicken breasts until they reach about 155°F. They will cook through in the oven. |

Make the Chicken BurriosI use the entire chicken breast and do not cut up the chicken to ensure extra tender juiciness. Put 1 chicken breast on each tortilla, smother with guacamole. Layer with cheese - I like a mixture of pepperjack cheese and cheddar cheese. Roll the burritos and place in a casserole dish. Top with cheese. Bake for 12-15 minutes. |
