Roast the VegetablesPreheat the oven. Cut all the vegetables. Add to sheet pan or roasting pan. Drizzle with olive oil and season with salt, pepper, and thyme. Roast for 20 min. |

Make the Honey Mustard SauceCombine the remaining ingredients and warm in the microwave for 1 min. |

Prepare the ChickenSeason the drumsticks with salt and pepper. Add to the vegetables and pour the honey mustard sauce over each piece of chicken and then drizzle over the carrots, onions, and parsnips. Bake for 20 min. Then flip chicken drumsticks and bake another 15 minutes. At the end, for crispy skin, turn on the broiler for 3 min., then flip for another 3 min. |

Alternative- Honey Mustard Chicken BreastsIf using chicken breasts, reduce the bake time to ensure they do not dry out. Do not use the broiler. If using both, simply remove the breasts after 20 minutes and keep warm - ensure the inner temp is at 165°F first. |
