1 (can be slightly old) French Baguette
2-3 Garlic Cloves
3-4 cups Cherry Tomatoes
A bunch Fresh Basil
red, or white, or shallot (optional) Onion
Balsamic Vinegar
Olive Oil
Fresh Mozzarella Cheese

Bruschetta with Garlic, Cherry Tomatoes, and Fresh Basil

This bruschetta recipe may be quick and easy to make, but it is a gourmet hit as an appetizer!

Prepare the Bruschetta Garnish

Slice the cherry tomatoes and remove the seeds. Finely dice. (Alternative: If you don't have cherry tomatoes, blanch and peel vine-ripe tomatoes, or use plum tomatoes.) Mince 2 garlic cloves and add. Chop the basil and add. If using a shallot or onion, dice and add - just a bit, you don't want to overpower the basil. Season with salt.

Make the Bruschetta

Toast the baguette slices. Peel a garlic clove and rub it against each slice of toast. Add the Bruschetta garnish. Drizzle with olive oil and/or balsamic vinegar if desired. Serve with fresh slices of mozzarella cheese with balsamic vinegar drizzle.
