Basic Marinara Sauce with Fresh Plum Tomatoes

The difference between a marinara sauce and a "spaghetti" sauce is that marinara is based on the rich goodness of the basics - garlic, tomatoes and basil. Spaghetti sauce typically has a lot more ingredients, eg carrots, celery, more herbs, meat, etc. Marinara sauce is a perfect pasta sauce and a delicious dipping sauce for fried vegetable sticks, mozzarella sticks and so much more.

Blanch the Tomatoes

To easily remove the skin (this step is what makes marinara sauce silky), put the whole tomatoes in boiling water for 3 minutes. Remove with a slotted spoon. Run over cold water and gently peel off the skin.

Peel and crush the garlic. Add 2 Tbsp oil to a pan over medium heat and cook garlic until golden brown, about 3 minutes.

Remove the sees from the peeled tomatoes and add to sauce pan with the remaining oil.

Season with salt and pepper, add chopped fresh basil, and cook on medium-low for 15 minutes.
