Marinate the Flank SteakRemove any silver lining from the flank steak, if any. (Tip: For extra tender meat, you can cut X marks on the top of the meat if you think it is a tougher piece of meat - don't go too deap, you don't want the meat to fall apart). Season with salt. Put the meat in a bowl (with a sealed lid) and add the oil and coat. Add the Cajun seasoning and coat well on both sides. Seal the container and let marinate at least 2 hours, or overnight in the refrigerator. |

Turn the grill on high heat. Remove the steak from the marinade and shake off any access - you don't want the meat to be to wet. (before grilling, I personally also add more salt and black pepper - optional - this helps form a thicker crust). Grill your Cajun-marinated flank steak for 1-2 minuets on each side without moving it - 130-140°F / 54 - 60°C for medium rare. Remove from heat, cover in foil and let rest for 5 minutes before slicing and serving. |
