Ingredients

Adjust Servings:
1 large head Cauliflower
1 cup Chicken Stock or water
1/2 cup Panko Bread Crumbs (Plain) or bread crumbs or Italian bread crumbs
1/4 cup Fresh Parmesan Cheese
1/2 cup Sour Cream or heavy cream
1 tsp or more to taste Salt
to taste Black Pepper
1 small bunch Green Onions

Cauliflower Purée

This is one of my favorite quick vegetable side dishes - tastes amazing! And is a great alternative to mashed potatoes.

In a large pot, bring the chicken stock to a boil. During this time, cut up the cauliflower. Once it is boiling, add the cauliflower to the pot and reduce the heat to medium-low and steam for about 20 minutes or until tender.

Drain the cauliflower and return it to the pot. Using a fork or a spoon, mash the cauliflower. (If you do not want it chunky, you can puree it with an immersion blender, or in a food processor or blender, then return it to the pot).

Add the panko or bread crumbs, the sour cream, and the Parmesan cheese (grated) and stir well. Season with salt and pepper. Let simmer on low for 3-5 minutes before serving.

Chop up the green onions for a garnish.

Variations

Using plain Panko bread crumbs, you can add fresh herbs such as thyme, parsley, and/or sage.
