1 large head Cauliflower

1 cup Chicken Stockor water

1/2 cup Panko Bread Crumbs (Plain)or bread crumbs or Italian bread crumbs

1/4 cup Fresh Parmesan Cheese

1/2 cup Sour Creamor heavy cream

1 tsp or more to taste Salt

In a large pot, bring the chicken stock to a boil. During this time, cut up the cauliflower. Once it is boiling, add the cauliflower to the pot and reduce the heat to medium-low and steam for about 20 minutes or until tender. |

Drain the cauliflower and return it to the pot. Using a fork or a spoon, mash the cauliflower. (If you do not want it chunky, you can puree it with an immersion blender, or in a food processor or blender, then return it to the pot). |

Add the panko or bread crumbs, the sour cream, and the Parmesan cheese (grated) and stir well. Season with salt and pepper. Let simmer on low for 3-5 minutes before serving. |
