1 Tbsp White Vinegar

2/3 cup warm Water

approx. 3/4 lb Ground Beef

1 Onion

4 Garlic Cloves

2 Tbsp Tomato Paste

1-2 Plum Tomatoes

1 Jalapeño Pepper

small bunch Cilantro

2 Green Onions

Make the Pasteis Empanada DoughMix the flour and salt. Add the lard and vinegar and mix while adding warm water a bit at a time. Knead until the dough forms a ball. Cover and let rest while making the filling. |

Make the Beef Empanada FillingSauté the diced onion, jalapeno, and minced garlic in oil for 1 min. Add the ground beef and season with salt and pepper. Dice the tomatoes (discard the seeds) and add. Stir in the tomato paste, diced green onions, and chopped cilantro. Let simmer until thickened. (If it is too watery or if you used fatter beef, strain first before filling). |

Make the Beef EmpanadasRoll out the dough on a floured surface and form the empanadas. Fill and pinch closed. Fry in a deep fryer or in a pan with oil until golden brown. |
