2 English Cucumbers

1 (or pink lady) Honey Crisp Apple

1 small (or 1/2 large) Red Onion

2 Tbsp Champagne Vinegar(You can also use walnut vinegar)

2 Tbsp White Truffle Oil(You can also use walnut vinegar)

1 tsp Granulated Sugar

1 tsp Fresh Thyme

1/2 cup Walnuts

2oz (56g) Goat Cheese

Using a vegetable peeler, peel and slice the cucumbers lengthwise. Reserve 4 pieces for the garnish if desired. Finely dice the remainder. |

Peel and finely dice the apple and onion. (If desired, you can leave the apple skin on for more crunch). |

Chop the walnuts and combine all the ingredients. |

Make a circle with the 4 slices. Add the salad inside the circles. Top with more goat cheese if desired. Serve immediately. |
