approx. 2 lbs (1kg) Carrots
2 Granny Smith Apples any type of sour, green apple is best for tartness
1 Lemon
2 Tbsp Honey
6-8 Green Onions
1/4 cup Apple Cider Vinegar
1 Tbsp Olive Oil
1/4-1/2 cup Greek Yogurt see below for details
1 tsp Garam Marsala
1 tsp Salt
1 tsp Black Pepper

Tart and Crunchy Carrot Apple Slaw with an Extra Bit of Spice

The secret bold ingredient in this crunchy carrot apple slaw is Garam Marsala! Garam Marsala pairs so well with carrots and apples, and the longer you let this salad marinate, the more flavorful it becomes. This carrot slaw is a great topping on BBQ pulled pork!

Peel and shred the carrots (I use a food processor with a slicer attachment for fast results) and add to a large mixing or serving bowl. Peel and finely slice the apples into match sticks and add. Juice the lemon and add. (For extra tartness and punch, zest a bit of the lemon rind and add). Add the remaining ingredients and mix well. Cover and refrigerate for an hour before serving for the most flavorful result!
