Ingredients

8 Large eggs
2 Tbsp Cream
1 Onion
1 large Potato
1 cup Ham Smoked ham or Canadian Bacon recommended
2 Tbsp, unsalted Butter
1 cup Grated Cheese Mozzarella or other
1/2 cup (grated) Parmesan Cheese

Ham and Potato Frittata

Preheat oven to 400°. Peel and dice the potato and onion. Melt the butter in a cast-iron skillet (or other oven-safe pan) over medium heat. Add potatoes and onion and cook, stirring occasionally for 10-12 minutes.

Whisk eggs, cream, grated cheese,1/4 cup of Parmesan cheese, a pinch of salt and black pepper.
Dice the ham and add to mixture.

Pour mixture into skillet and let cook for 3 minutes.

Transfer to oven. Bake until golden brown, 10-12 minutes.

Sprinkle remaining Parmesan cheese on top and serve.
