2, pre-cooked (or shredded roasted chicken) Chicken Breasts
2 Celery Stalks
2 (e.g. Honeycrisp) Apples
A bunch - to your liking Red Grapes
1 cup Pecans
1 Lemon
1/2 cup Greek Yogurt
1 Egg Yolk
1 tsp Dijon Mustard
Salt
Black Pepper
4 (optional) Lettuce Leaves
or other bread/rolls (optional) Baguette (French Bread)

Healthy Homemade Chicken Waldorf Salad with Pecans and Greek Yogurt (No Mayonnaise)

Since I dislike the taste of store-bought mayonnaise, I substitute it in my chicken Waldorf salad with Greek yogurt, dijon, and 1 egg yolk. This cold salad is delicious on lettuce leaves or on toasted French bread as a sandwich.

Dice the celery, apples (I prefer to peel them), and chicken. Slice the grapes. Crush the pecans. Mix in a large bowl.

Make the Greek Yogurt Dressing

In a bowl, mix the greek yogurt with the dijon and egg yolk. Juice the lemon and add. Add a bit of zest if desired. Add a pinch of salt and pepper. mix well, then add to salad. Season again with salt and pepper to your liking.

Serve on lettuce leaves (e.g. romaine or bibb), or on toasted bread if desired.
