Roast the VegetablesPeel and dice the vegetables. Season with salt and toss with a bit of olive oil. Roast in the oven at 400°F/200°C on a lined baking sheet for 30 min. |

Cook the PastaCook the pasta and reserve 1 cup of pasta water for the sauce. |

Prepare the Roasted Carrot Pasta SauceIn a blender or food processor, puree the vegetables with the chicken or vegetable stock and tomato paste. Add to a large sauce pan and cook on medium-low heat for 10 min. Season with salt and pepper. If you like spiciness, add red pepper flakes. Stir in 1/2 cup of pasta water and let simmer for 10 minutes. If it is too thick, add more pasta water. |
