3 Garlic Cloves

2 cups (Or Vegetable Stock) Chicken Stock
1/2 cup Tomato Paste
Optional Red Pepper Flakes
garnish Fresh Parmesan Cheese
garnish Fresh Parsely

Kid-Friendly Roasted Carrot Pasta Sauce

This is a quick and easy flavorful and healthy pasta sauce made with loads of hidden goodness. For adults - spice it up with red chili pepper flakes!

Roast the Vegetables

Peel and dice the vegetables. Season with salt and toss with a bit of olive oil. Roast in the oven at 400°F/200°C on a lined baking sheet for 30 min.

Cook the Pasta

Cook the pasta and reserve 1 cup of pasta water for the sauce.

Prepare the Roasted Carrot Pasta Sauce

In a blender or food processor, puree the vegetables with the chicken or vegetable stock and tomato paste. Add to a large sauce pan and cook on medium-low heat for 10 min. Season with salt and pepper. If you like spiciness, add red pepper flakes. Stir in 1/2 cup of pasta water and let simmer for 10 minutes. If it is too thick, add more pasta water.

Toss your cooked pasta in the sauce and serve with fresh Parmesan cheese and fresh parsely.
