Make the Pie Crust (optional)This versatile low-fat pie crust is perfect for this apple or peach pie, and is extremely easy to make: All-Purpose Low-Fat Pie Crust. I make this pie with only a top crust, but you can also double it and have a bottom crust as well. |

Make the Apple or Peach Pie FillingPreheat the oven to 425°F / 218°C. Melt the butter in a sauce pan, then whisk in the flour to make a roux (paste). Add the water, sugar, and cinnamon and bring to a boil. Reduce to low and let simmer. |

Peel and slice the apples or peaches. Add to your pie pan. I use a 9" cast iron pie pan. Cover with the crust. I use lattice work (roll out the dough, cut into strips and weave them). Pour the hot sugar sauce all over, covering the pie crust. Bake for 15 minutes, then reduce the temperature to 350°F / 176°C and bake for another 35-45 minutes. |
