1 batch Homemade Parmesan Crisps see link for the quick 10-min. recipe
4 cups Arugula or other greens, such as spinach
approx. 8 oz (226g) Strawberries
1/2 cup Pine Nuts
approx. 4 oz (113 g) Goat Cheese If you can find crumbled goat cheese, it's easiest!
2 Shallots
1 tsp Kosher Salt
1 tsp Cracked Black Pepper

Strawberry Goat Cheese Arugula Salad with Parmesan Crisps and Lemon Basil Vinaigrette

The combination of fresh, sweet strawberries, creamy goat cheesy, nutty, crunchy pine nuts and salty Parmesan crisps with the tart and tangy lemon basil vinaigrette - this is a winner salad combo for every occassion!

Make the Parmesan Crisps (optional)

You can of course use store-bought, or leave them out - but these are a flavor game changer in this and in any other salad! It literally takes less than 15 minutes with 2 ingredients - fresh Parmesan and black pepper, and your oven. You can also make these ahead of time. Get the recipe here: Parmesan Crisps Recipe.

Make the Lemon Basil Vinaigrette (optional)

Here again you can of course use store-bought, but making fresh vinaigrette is so easy, and it tastes so good. Get the 5-minute recipe here: Lemon Basil Vinaigrette Recipe.

Wash and slice the strawberries. Peel and finely slice the shallots. Toss with the arugula or whichever greens you choose. Season with salt and pepper. Top with crumbled goat cheese, pine nuts, lemon basil dressing and Parmesan crisps (I also like to crush a few Parmesan crisps for more texture and saltiness).

Variation

Swap out the goat cheese for feta cheese. Try almonds instead of pine nuts, or pecans.
