Ingredients

Adjust Servings:
1 lb (or chicken tenders or thighs) Chicken Breasts
3 Tbsp Chipotle Peppers in Adobo Sauce
3 Garlic Cloves
1 Tbsp Olive Oil
2 Onions
2 cans Black Beans
1 Lime
garnish Fresh Cilantro
To your liking - Mexican blend, cojito, etc. Cheese

Ooey Gooey Chipotle Adobo Chicken and Blackbeans

This adobo chipotle pepper chicken and blackbean dish packs a heat punch and is simply just ooey gooey delicious! Chipotles can be found premarinated in adobo sauce (adobar meas marinade/sauce/seasoning) which is made of onions, garlic, vinegar, paprika, black pepper, cumin, and oregano. Adobo dishes are popular in Peru, Puerto Rice, the Philippines, and Mexico.

Marinate the Chicken in Chipotle Adobo Sauce

Dice the Chipotle chilis (if whole). Dice the chicken into cubes and season with salt. Coat wit hthe chipotle chili peppers and adobo sauce and let rest 15-30 min., or cook right away.

Rinse and drain the black beans.

Saute the chicken in the marinade. Remove from pan.

Mince the garlic and dice the onions and add to pan with olive oil. Saute 3-5 min. Add the beans and let simmer 5 minutes. Add juice of 1 lime and stir. Add the chicken back to the pan. Top with cheese and simmer with a lid on until melted. Add chopped cilantro and serve. (Serviing suggestions - this makes for a good filling for tortillas or as a tortilla chip dip!)
