Adjust Servings:
1.5 lbs (700g) Peaches
1/2 cup (80 ml) Light Corn Syrup or Glucose syrup
3/4 cup (170g) Granulated Sugar
170ml (5.7 oz) Peach Lambic Beer
Small handful Fresh Mint Leaves

Peach Mint Lambic Beer Sorbet

This is my absolutely new favorite way to make the creamiest, fruitiest, tastiest sorbet - Belgian style with Lambic beer, the "champagne" of beers!

Special equipment: food processor or mixer and an ice-cream/sorbet maker.

Make the Simple Syrup for the Sorbet

Peel and cut the peaches and remove the pits. Puree the peaches. Add the puree with the sugar and corn syrup in a pot (3-quart) over medium-high heat. Whisk constantly until the sugar dissolves (about 2-3 minutes). Remove from heat and allow to cool for 1 hour.

Once the syrup has cooled, add the Peach Lambic Beer and mint and stir. Transfer to the ice-cream machine bowl and churn following the manufacturer's directions.

When finished churning, transfer to an airtight freezer container and freeze 2 hours before serving.
