“Schnitzel-Style” Garlic Steak (chicken-fried steak Germanized)

4 Top Sirloin Steaks
1 cup All-Purpose Flour
2 eggs
3 Garlic Cloves
1.5 cups Panko Bread Crumbs (Plain)
2 Tbsp Olive Oil
2 Tbsp Butter

“Schnitzel-Style” Garlic Steak (chicken-fried steak Germanized)

It's called Chicken-Fried steak only due to the fact that the steak is breaded like fried chicken. The term was actually invented in Texas. Normally, cube steak is used, but I love using top sirloin cuts for extra tenderness. I sldo prefer using a skillet instead of a deep fryer. My version is more "Schnitzel style".

Prepare the Steaks

Using a meat mallet or a fryng pan, pound out the meat to thin it out and tenderize it. (Use can use plastic wrap, but I don't because I avoid using platic on my food. Season well with salt on both sides.

Bread the steaks.

Sett up the dredging station: Flour, eggs whisked, and Panko breadcrumbs mixed with the minced garlic. Dip each steak first in flour, then in the eggs, then in the breadcrumbs. Doubldip for extra crust.

Fry the Steaks

Add olive oil and butter to your pan (this mix prevents the crust from burning). Once hot, fry the steaks about 2-3 min. per side. I like mine medium rare for tender juiciness (130°-140°F).

Serving Suggestion

I love steak with a side of steamed greenbeans, quickly sauteed with crushed almonds and a mix of panko crumbs (the leftovers from the breading station) and minced garlic.
