Prepare the SteaksUsing a meat mallet or a fryng pan, pound out the meat to thin it out and tenderize it. (Use can use plastic wrap, but I don't because I avoid using platic on my food. Season well with salt on both sides. |

Bread the steaks.Sett up the dredging station: Flour, eggs whisked, and Panko breadcrumbs mixed with the minced garlic. Dip each steak first in flour, then in the eggs, then in the breadcrumbs. Doubldip for extra crust. |

Fry the SteaksAdd olive oil and butter to your pan (this mix prevents the crust from burning). Once hot, fry the steaks about 2-3 min. per side. I like mine medium rare for tender juiciness (130°-140°F). |

Serving SuggestionI love steak with a side of steamed greenbeans, quickly sauteed with crushed almonds and a mix of panko crumbs (the leftovers from the breading station) and minced garlic. |
