Prepare the RicottaPreheat the oven. spread the ricotta cheese in a baking dish and bake approx. 1.5 hrs until dry. |

Prepare the SpinachCook the spinach in salted boiling water for 3 minutes. Drain and rinse with cold water. Important: let drain in a colander for an hour and periodically hand squeeze water out of the spinach. You want to remove as much moisture as possible. |

Put Together the Sauce.Saute the minced garlic and diced onions in oil. Add the marinara sauce and simmer. |

Make the Ricotta GnocchiBoil salt water in a large pot. Mix the dried ricotta cheese and completely drained spinach wit hflour and egg yolks. Season with sale and pepper. Add a touch of fresh nutmeg if desired. Form balls - don't over work the dough; you want them to remain nice and fluffy. Add the ricotta spinach gnocchi balls to the boiling water. Cook them until they float to the surface, about 4 min. Remove with a slotted spoon. |

Either serve as-is with the marinara sauce, or alternatively, you can brown butter in a pan - melt butter and cook until brown in color, then saute the ricotta spinach gnocchi to add texture. I personally love them without sauteeing. |
