Roast the VegetablesPreheat the oven to 450°F / 232°C. Line a baking sheet with foil. Peel and cut the onion and garlic. Cut the tomatoes and peppers in halves. Toss in a bowl with the oil and sugar. Place on baking sheet and bake for 20-25 minutes. |

Juice the limes and add to a blender. Chop the cilantro and add. Add vinegar, salt, chipotles (optional for more heat). Add the roasted vegetables and blend. If it is too hot and spicy, or if you just want a creamier version, add sour cream. |
