Ingredients

Adjust Servings:
1 lb (500g) Tomatoes
1 Red Onion
1 Bell Pepper any variety, I love yellow)
5 Garlic Cloves
1 Scotch Bonnet Chili Pepper Or habanero
1/2 cup Olive Oil
2 Tbsp Granulated Sugar
1 bunch (50g) Fresh Cilantro
2 Limes
1 Tbsp Sherry Vinegar
1 Tbsp (optional) Chipotles in Adobe
1 Tbsp Salt
2 Tbsp (optional) Sour Cream

Fuego Salsa Sauce with Roasted Vegetables

A perfect, hot and spicy salsa topping for tacos, burritos, and as a dipping sauce.

Roast the Vegetables

Preheat the oven to 450°F / 232°C. Line a baking sheet with foil. Peel and cut the onion and garlic. Cut the tomatoes and peppers in halves. Toss in a bowl with the oil and sugar. Place on baking sheet and bake for 20-25 minutes.

Juice the limes and add to a blender. Chop the cilantro and add. Add vinegar, salt, chipotles (optional for more heat). Add the roasted vegetables and blend. If it is too hot and spicy, or if you just want a creamier version, add sour cream.
