Make the Simple Syrup for the SorbetCut the plums and remove the pits. Combine the plums, sugar and corn syrup in a pot (3-quart) over medium-high heat. Whisk constantly until the sugar dissolves (about 2-3 minutes). Remove from heat and allow to cool for 1 hour. |

Once the syrup has cooled, add the Raspberry Lambic Beer and stir. Transfer to the ice-cream machine bowl and churn following the manufacturer's directions. |

When finished churning, transfer to an airtight freezer container and freeze 2 hours before serving. |
