4 Chicken Breasts
1 pound (or pre-made) Fresh Fettuccine Noodles See recipe link
2 Tbsp Olive Oil
1 cup Chicken Stock
3 Garlic Cloves
1/4 cup All-Purpose Flour
1 1/2 cups Whole Milk Or cream
1 tsp Salt
1 tsp White Pepper
3/4 cup Parmesan Cheese Grated
Small handfull Fresh Sage Leaves
Small handfull Fresh Parsley
1 Lemon

Homemade Creamy Chicken Fettuccine Alfredo Pasta with Fresh Herbs

Make the Homemade Fettuccine Noodles

If you are making your own Fettuccine noodles from scratch, here is a great and easy recipe: How to Make Basic Homemade Pasta with Durum Flour. If using freshly made store-bought pasta, you will add the noodles in right at the end. If you are using boxed pasta, follow the box's directions ;)

Sauté the Chicken

Pat the chicken breasts dry. Season with salt. Heat the olive oil in a deep pan and sauté on medium-high heat, about 5 minutes on each side. (Inside temperature should be 165°F / 73.8°C). Don't move or flip the chicken around, otherwise the crust will not be crispy. Remove and set aside to rest.

While the chicken is cooking, peel and mince the garlic. And set aside. Chop the herbs and set aside. Juice 1 lemon and set aside. Zest a bit of the lemon peel if you would like a fresh citrus note to top off your dish at the very end.

Immediately after removing the chicken from the pan, add the chicken stock to the same pan on medium heat. Add the garlic. Let cook simmer for 3-5 minutes.

Remove 1 ladle of the hot chicken stock and pour in a heat resistant bowl. Gradually add the flour and whisk until thick and there are no more lumps. Pour into the pan and whisk.

Add the salt, pepper, milk and combine. Slowly add the Parmesan cheese while continuing to whisk. Add the sage, parsley and lemon juice and whisk. Let simmer on low for 3 minutes.

Add your freshly made pasta to the sauce on the stove on low heat and stir. Let simmer for 3-5 minutes.

Slice your chicken breasts. You can either add them to the pan directly or plate your fettuccine alfredo and top it with the sliced chicken. Add a pinch of lemon zest if desired and serve.

Serving Suggestions

This Homemade Chicken Fettuccine Alfredo goes well with steamed broccoli, peas, or creamed zucchini (cook 2 diced zucchini and 1 onion in 1 cup chicken broth, add salt, pepper, and simmer for 20-25 minutes, then add a bit of whole milk or cream and serve - I mix it in with the pasta as well).
