Ingredients

Adjust Servings:
1 lb (approx. 450 gm) Mozzarella Balls Mini mozzarella balls are best
1 pint (2 cups, 445 gm) Cherry Tomatoes
1/4 cup Olive Oil
1 Yellow Bell Pepper
2 Tbsp Honey
2 Tbsp Dijon Mustard
2 Tbsp Champagne Vinegar or white wine, walnut or balsamic vinegar
1 large bunch Fresh Basil
1 tsp Salt
1/2 tsp Cracked Black Pepper

In a salad or mixing bowl, whisk the oil, champagne vinegar, honey, and dijon mustard. Season with salt and pepper.

Slice the cherry tomatoes into halves and add.

Cut the yellow pepper, remove the seeds , dice and add.

Chop the fresh basil and add.

Toss well. Season with more salt and pepper if needed. Cover and let marinate in the refrigerator for about an hour before serving.

Variations to try out: crushed garlic, diced red onions, or crushed pistachios. Try a mix of yellow and red cherry tomatoes. Throw in an orange bell pepper for more color. For meat lovers - dice up some hard salami.
