1 pint (2 cups, 445 gm) Cherry Tomatoes

1/4 cup Olive Oil

1 Yellow Bell Pepper

2 Tbsp Honey

2 Tbsp Dijon Mustard

2 Tbsp Champagne Vinegaror white wine, walnut or balsamic vinegar

1 large bunch Fresh Basil

1 tsp Salt
-
1/2 tsp Cracked Black Pepper

In a salad or mixing bowl, whisk the oil, champagne vinegar, honey, and dijon mustard. Season with salt and pepper. |

Slice the cherry tomatoes into halves and add. |

Cut the yellow pepper, remove the seeds , dice and add. |

Chop the fresh basil and add. |

Toss well. Season with more salt and pepper if needed. Cover and let marinate in the refrigerator for about an hour before serving. |

Variations to try out: crushed garlic, diced red onions, or crushed pistachios. Try a mix of yellow and red cherry tomatoes. Throw in an orange bell pepper for more color. For meat lovers - dice up some hard salami. |
