Ingredients

Adjust Servings:
6 Beef Tomatoes or 8-10 vine-ripe tomatoes
1 cup Water
1/2 cup Apple Cider Vinegar
1 Tbsp Granulated Sugar
1/2 tsp Dry Mustard
1/2 tsp Paprika
1 tsp Salt
1/2 tsp Chili Pepper
1 Garlic Clove or 1/2 tsp garlic powder
1 Jalapeño Pepper
1 cup (1 large bunch) Fresh Cilantro
1 Lime

Tomato Salad with Cilantro Vinaigrette

I took these marinated tomatoes to a picnic and everyone loved them so much, they topped off their burgers with them as well!

Make the Vinegar Base

Combine the water, vinegar, sugar and all the spices and bring to a boil for 1 minute. Remove from heat and set aside.

Peel and mince the garlic and add to the vinegar base. Chop the pepper and add (with or without seeds depending on how spicy you want it). Chop the cilantro and add. Juice the lime and add the juice. Stir to combine.

Slice the tomatoes. In your serving dish, layer the tomatoes, one layer at a time, then add the vinaigrette,another layer, etc. Cover and refrigerate for 1 hour or until serving.
