Ingredients

Adjust Servings:
1 9" crust Low-Fat Pie Crust see link to make your own from scratch
approx. 2.2 lbs (1 kg) Tomatoes
approx. 4 oz (100g) Fresh Mozzarella Cheese or another cheese, such as gouda or gruyere
approx. .6 lbs (300g) Ground Beef I use 96% lean
2 Tbsp Olive Oil
3 Shallots or 1 onion
4 eggs
1/4 cup Cream
1 Tbsp Fresh Parsely
2 Tbsp Fresh Basil
1/2 Tbsp Fresh Thyme
2 Tbsp Dijon Mustard
to taste Salt
to taste Black Pepper

Make the Pie Crust (optional)

This versatile low-fat pie crust is perfect for this apple or peach pie, and is extremely easy to make: All-Purpose Low-Fat Pie Crust. I make this pie with only a top crust, but you can also double it and have a bottom crust as well.

Prepare the Tomatoes and Pie Crust

Preheat the oven to 400°F / 200°C. Slice the tomatoes in discs. Let them drain in a colander. Roll out the pie crust and place in pie pan. Spread the dijon mustard over the pie crust. Set aside.

Make the Beef Filling

Peel and slice the shallots. Add the oil to the pan and saute for 3 minutes. Add the ground beef and season with salt and pepper. Let cook until no longer pink.

Make the Egg filling

Beat the eggs and cream. Season with salt and pepper. Mince the herbs and add.

Put the Quiche Together

Layer the pie crust with tomato slices. Add the beef mixture. Pour the egg mixture over it. Top with more sliced tomatoes. Bake for 35-45 minutes.
