Make the Pie Crust (optional)This versatile low-fat pie crust is perfect for this apple or peach pie, and is extremely easy to make: All-Purpose Low-Fat Pie Crust. I make this pie with only a top crust, but you can also double it and have a bottom crust as well. |

Prepare the Tomatoes and Pie CrustPreheat the oven to 400°F / 200°C. Slice the tomatoes in discs. Let them drain in a colander. Roll out the pie crust and place in pie pan. Spread the dijon mustard over the pie crust. Set aside. |

Make the Beef FillingPeel and slice the shallots. Add the oil to the pan and saute for 3 minutes. Add the ground beef and season with salt and pepper. Let cook until no longer pink. |

Make the Egg fillingBeat the eggs and cream. Season with salt and pepper. Mince the herbs and add. |

Put the Quiche TogetherLayer the pie crust with tomato slices. Add the beef mixture. Pour the egg mixture over it. Top with more sliced tomatoes. Bake for 35-45 minutes. |
