Ingredients

Adjust Servings:
1 lb (.45 kg) Beef Sirloin Tips or filet tips or filet mignon
2 Tbsp All-Purpose Flour
2 Tbsp + 1 Tbsp Olive Oil or clarified butter
1 Onion
1 Garlic Clove
1 cup Beef stock
1/2 cup Cream
1/4 cup Sour Cream
1 Tbsp Worcestershire Sauce
1 Tbsp Dijon Mustard
Salt
Black Pepper
1/2 cup sliced - optional Mushrooms
1/4 cup diced - optional Green Onions
12 oz (340g) Egg Noodles

Creamy Beef Stroganoff

This creamy beef stroganoff is quick and easy to make, and is one of our family weeknight favorites.

Make the Noodles

Cook the noodles according to the package instructions.

Sear the Beef Sirloin Tips

Cut the beef sirloin into cubes or thinner slices - your preference. Season with salt and pepper. Toss in flour. Heat a pan (I use a cast iron skillet) with the oil. On medium-high heat, sear the beef for 1-2 minutes, then flip the pieces and sear another 1-2 minutes. Remove from pan.

Peel and slice the onions. Peel and mince the garlic. Add 1 Tbsp oil (or butter) to the hot pan and saute the onions and garlic for 3 minutes. Add the beef stock, worcestire sauce, dijon mustard and stir. Let simmer for 5 minutes. Add the cream and sour cream and stir well until creamy. Add the beef back to the pan and let simmer for 3 minutes. Season with salt and pepper. (If adding mushrooms, saute them with the onion and garlic first.)

Serve over egg noodles. top with green onion if desired.
