1 lb (.45 kg) Beef Sirloin Tipsor filet tips or filet mignon

2 Tbsp All-Purpose Flour

2 Tbsp + 1 Tbsp Olive Oilor clarified butter

1 Onion

1 Garlic Clove

1 cup Beef stock

1/2 cup Cream

1/4 cup Sour Cream

1 Tbsp Worcestershire Sauce

1 Tbsp Dijon Mustard

1/2 cup sliced - optional Mushrooms

1/4 cup diced - optional Green Onions

Make the NoodlesCook the noodles according to the package instructions. |

Sear the Beef Sirloin TipsCut the beef sirloin into cubes or thinner slices - your preference. Season with salt and pepper. Toss in flour. Heat a pan (I use a cast iron skillet) with the oil. On medium-high heat, sear the beef for 1-2 minutes, then flip the pieces and sear another 1-2 minutes. Remove from pan. |

Peel and slice the onions. Peel and mince the garlic. Add 1 Tbsp oil (or butter) to the hot pan and saute the onions and garlic for 3 minutes. Add the beef stock, worcestire sauce, dijon mustard and stir. Let simmer for 5 minutes. Add the cream and sour cream and stir well until creamy. Add the beef back to the pan and let simmer for 3 minutes. Season with salt and pepper. (If adding mushrooms, saute them with the onion and garlic first.) |
